Buffalo Chicken Stuffed Sweet Potato

Ingredients:
2 sweet potatoes
1 lb chicken breast
1 bag brussel sprouts
Frank’s red hot original sauce
Tony’s seasoning
Directions:
1.     Preheat oven to 425°.
2. Bake sweet potatoes for 40-45 minutes or until soft.
3. Season chicken breast with Tony’s seasoning and had to oven next to sweet potatoes for 25 minutes.
4. Once chicken is baked shred or cut into cubes and place in a bowl with cooked and chopped brussel sprouts.
5. Add ½ cup franks hot sauce (or more depending on taste) to mix of brussel sprouts and shredding chicken. Mix well.
6. Cut potatoes into 4 halves and place ¼ of bowl mixture on each potato half.
7. Pop back into the oven for about 10 minutes at 350° to let the flavors cook together.
Serving Size: 1 stuffed potato half
