Guilt Free Lasagna Rolls
Ingredients
11 Cooked lasagna noodles
1 - 10 oz Frozen chopped spinach
1 - 15 oz Container of fat free ricotta cheese
1/2 C. Grated parmesan Cheese
1 Egg
1/2 Tsp. Minced garlic
1/2 Tsp. Dried Italian seasonings
Salt & Pepper
32 oz. Spaghetti sauce
11 Tbls. part skim milk mozzarella cheese (shredded)
1 Pound lean beef or turkey
Directions
1. Preheat oven to 350 degrees. Combine spinach, ricotta, parmesan cheese, egg, garlic, Italian seasonings, meat, and salt/pepper in a medium bowl. Pour about 1 cup of spaghetti sauce on the bottom of a 9x13 baking dish.
2. Lay out lasagna noodles on wax paper. Make sure they are dry. Put 1/3 cup ricotta mixture and spread over noodle. Roll carefully and place seam down in baking dish. Repeat for all noodles.
3. Cover lasagna rolls with remaining spaghetti sauce and top each one with 1 tablespoon mozzarella. Cover tightly with foil.
4. Bake for 40 minutes or until cheese melts.
Makes 11 servings.
